A college gal's reacquaintance with her lonely stove-- Flatbread sandwiches

Yesterday morning, I was at the grocery store contemplating what I could possibly make for lunch. As I was scanning the perimeter of the grocery store (by the way, I’ve learned this is the best way to shop for food. The products around the edges of the store is fresher and is most likely not processed the same as canned and frozen foods), I noticed Hungry Girl whole grain wraps.

They’re made in circular shapes that you can just fold together after you make your flatbread. The ready-to-fold shape and expert marketing totally sold me. From that point, I knew exactly what I was craving.

I bought a green pepper, red tomato, mushrooms, low-sodium turkey slices, provolone/mozzarella cheese, salad greens and different types of melons.

Sidenote: It is important to consume low-sodium foods. A lot of meats are filled with salt to preserve them for a long time, but eating too much salt is extremely unhealthy. It raises blood pressure and can cause heart disease, diabetes, hypertension and other potentially fatal diseases. The frequent combination of high-sodium and fatty foods is a recipe for disaster.

Since I don’t have a Panini grill, I cooked the turkey on the stove on medium heat for about a minute and a half on each side, and then placed a slice of cheese on top so it would melt. Next, I cut up the veggies.

When cutting a pepper, I usually take out the white part and seeds. But before preparing them, I read an article to figure out why people do this. I learned that these parts near the core of the pepper are actually full of flavonoids, which are filled with Vitamin P and citrin, and are safe to eat.

But then I read another article saying that consuming too many flavonoids can be linked to cancer. Quite the controversy…I would just suggest being safe and cutting them off. That’s what multivitamins are for anyway, right?

After I added all my other ingredients, I used Kraft’s Mayonnaise with Olive Oil, which has half the fat and calories of regular mayonnaise. I found it actually tastes a lot better and doesn’t look so gross and clumpy.

Finally, I added some melons on the side and topped them with a little light whipped cream. It was the perfect side/dessert.

To drink, I made a little green tea, which gave me the perfect boost of energy to finish my day.

Ingredients:

1 packet of Hungry Girl whole grain wraps

1 green bell pepper

1 tomato

1 slice of Provolone/Mozzarella cheese

2 slices of low sodium turkey

1 bag of lettuce greens

1 watermelon

1 cantaloupe

1 green melon

1 can of Whipped Cream

Pre-made pesto and/or ranch dressing

Recipe:

Use a Panini grill or stove to heat up meat and melt cheese.

Add whatever condiments and veggies you like best.

Cut up some fruit on the side and add a little light whipped cream.

To drink: Pour yourself a glass of green tea and you’re good to go for a healthy lunchtime meal!
