I hope you enjoyed last week’s meal, Asparagus Stuffed Chicken Breast, as much as I did.
This week, we are heating things up a bit (literally) by making Cajun Cauliflower Rice! If you like a little spice in your life, then this recipe is for you. This recipe is also perfect for someone on a low carb or Keto diet, because it uses cauliflower rice instead of regular rice. To top it off, it only costs $12 and makes 2 servings! How great is that?
Let’s jump right in.
Cajun Cauliflower Rice
Prep Time: 5 minutes Total Time: 15 minutes
The equipment necessary is minimal:
- A pan
- A cutting board
- A knife
- A tablespoon measuring cup
The ingredients needed are slim:
- 2 hot/cajun style sausage links ($2.86 at Walmart)
- 1, 10oz bag of frozen cauliflower rice ($2.48 at Walmart)
- ½ bell pepper of any color ($0.72 at Walmart)
- ½ onion ($0.54 at Walmart)
- ½-1 tbsp of cajun seasoning ($3.74 at Walmart)
- 1-2 tbsp of olive oil ($2.28 at Walmart)
To Start off, dice the onion and pepper and slice the sausage into bite-sized pieces.
Then, over medium heat, saute the onion and pepper with the olive oil until they begin to soften, and then add the sausage. Continue to cook until the sausage begins to brown.
Once the sausage has browned, stir in the cauliflower rice and cajun seasoning and cook until the rice is fully heated through.
There you have it: Cajun Cauliflower Rice!
I love how simple this dish is. All you have to do is chop up the vegetables and sausage and throw it in a pan, and then you’re good to go!
