Hello and welcome back to The Egg Burner!
This week I thought it would be great to embrace autumn by making a fall-themed dish. I want to get everyone in the right spirit, because let’s face it: Fall is the best season, and it deserves to be celebrated.
To me personally, nothing screams fall more than pumpkins. Pumpkin spice lattes, pumpkin pies, pumpkin carving, you name it: You can’t have fall without pumpkins!
Because of this, I thought we’d make some delicious pumpkin-themed pastries: pumpkin muffins. But not just any pumpkin muffins — three ingredient pumpkin muffins!
Not only do these muffins taste amazing, but they can be made for under $5! How incredible is that?
Let’s get started.
Three Ingredient Pumpkin Muffins
Prep Time: 5 minutes Total Time: 25 minutes
Equipment needed is minimal:
- A muffin tin
- A mixing bowl
- Cupcake liners
Only a trio of ingredients are needed:
- 1 package of devil’s food cake mix ($0.88 at Walmart)
- 1 can (15 ounces) of pumpkin puree ($2.09 at Walmart)
- ⅓ cup of applesauce ($1.98 at Walmart)
- Optional: ½ cup chocolate chips ($1.74 at Walmart)
To start off, preheat the oven to 350 degrees Fahrenheit. Then, combine all of the ingredients in a bowl and mix using either a spoon or electric mixer until fully combined.
Next, line the muffin tin and spoon the batter into the liners.
Finally, place the muffins in the oven and bake for 18 to 20 minutes or until fully cooked through.
There you have it: three ingredient pumpkin muffins!
These muffins turned out delicious, as they tasted incredibly gooey and chocolatey.
However, I did not get as much of a pumpkin flavor as I would have liked.
If you want your muffins to have a strong pumpkin flavor, I recommend you switch out the can of pumpkin puree for a can of pumpkin pie filling instead.
