For my first blog of the semester, I thought I’d start out with a simple yet delicious recipe that’s perfect for a quiet dinner at home: asparagus stuffed chicken breast. This meal takes less than an hour to make and costs less than $13. That’s a win-win in my book.
The equipment needed is minimal:
- A pan
- A baking sheet
- A cutting board
- A knife
- A teaspoon measuring cup
The ingredients are simple:
- 2 chicken breasts ($5.83 at Walmart)
- 1 bundle of asparagus ($2.08 at Walmart)
- Mozzarella cheese ($2.77 at Walmart)
- 1 teaspoon of garlic powder ($0.98 at Walmart)
- 1 teaspoon of paprika ($0.98 at Walmart)
- 1 teaspoon of italian seasoning ($0.98 at Walmart)
- Salt
- Pepper
To start off, preheat the oven to 400 degrees. Then, slice the chicken breasts nearly in half but leaving just enough connected to be able to fold the breast in half.
Next, create the seasoning mix by combining the garlic powder, paprika and Italian seasoning.
Spread the seasoning on the front and back of each chicken breast and then sprinkle them with salt and pepper.
Next, sprinkle mozzarella cheese on the inside of the chicken breast and place 3 to 4 asparagus on top of the cheese. Then, fold the chicken breast in half to cover the cheese and asparagus.
Now, put the chicken breasts in a frying pan and place on a stovetop over medium heat. Cook the chicken for five minutes. Then flip and cook the other side for an additional five minutes. If you want, you can cook any leftover asparagus on the stovetop as well for a tasty side dish!
Lastly, place the chicken on a baking sheet and cook in the oven for 15 to 20 minutes.
There you have it: asparagus stuffed chicken breast!
